Doro wat is an iconic Ethiopian dish, renowned for its rich, complex flavors.
Ingredients :
- 1 whole chicken, cut into pieces
- 3 medium onions, chopped
- 5 cloves garlic, chopped
- 2 tablespoons grated fresh ginger
- 4 tablespoons of berbere
- 1 teaspoon of turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 tablespoon clarified butter (ghee)
- 1/2 cup water
- Salt to taste
- Suggested Fradameck Spices: Tosepela Garlic & Ginger, Elengi Chicken, Guaduma Onion & Ginger & Garlic
Preparation :
- Marinate the chicken : In a large bowl, mix the chicken with the juice of one lemon, a tablespoon of berbere, grated ginger, minced garlic, salt and a pinch of black pepper. Let marinate for at least 30 minutes.
- Sauté the onions : In a casserole dish, melt the ghee. Add the chopped onions and sauté until they become translucent.
- Add the spices : Add the rest of the berbere, the turmeric, the cinnamon, the cloves and the cayenne pepper. Sauté for a few minutes to release the aromas.
- Add the chicken : Add the marinated chicken with its marinade to the casserole dish. Mix well to coat all the pieces.
- Simmer : Pour in the water and bring to a boil. Reduce the heat, cover and simmer for about 1 hour, or until the chicken is tender and the sauce has thickened.
- Add Fradameck Spices : To enhance the garlic and ginger flavors, add a teaspoon of Tosepela Garlic & Ginger. For a more pronounced chicken flavor, stir in a pinch of Elengi Chicken. And for a complete aromatic base, add a teaspoon of Guaduma Onion & Ginger & Garlic.
- Serve : Serve hot with injera, an Ethiopian flatbread, or basmati rice.
