Beef and yam broth

Here is a recipe for tasty beef broth:


Ingredients

  • 1 kg of boiling beef (shank, shoulder)
  • 2 carrots
  • 1 onion
  • 1 stalk of celery
  • 2 cloves of garlic
  • 2 bay leaves
  • 10 black peppercorns
  • 1-2 cubes Elengi beef
  • Salt to taste
  • Olive oil


Instructions :

  1. Brown the meat : In a casserole dish, heat a little olive oil and brown the pieces of beef on all sides.
  2. Add vegetables : Add carrots, onion, celery, garlic, bay leaves and peppercorns to the pot. Sauté for a few minutes to release their flavors.
  3. Moisten and simmer : Pour cold water over the meat and vegetables until it covers them. Bring to a boil, then reduce the heat and simmer, covered, for at least 2 hours, or until the meat is tender.
  4. Add Elengi Cubes : About 30 minutes before the end of cooking, add the Elengi beef cubes. They will melt and infuse the broth with their rich, complex flavor.
  5. Taste and adjust : Taste the broth and add salt if necessary.
  6. Serve : Strain the broth to remove the vegetables and bones. You can serve this broth as is, or use it as a base for other recipes, such as soup, pot-au-feu, or even a sauce to accompany your meat dishes.

Additional tips:

  1. Meat : For an even more flavorful broth, you can use marrow bones.
  2. Vegetables : Feel free to vary the vegetables according to your preferences. Leeks, parsnips, celeriac are excellent options.
  3. Spices : If you want to further customize your broth, add other spices like thyme, rosemary, or flat-leaf parsley.
  4. Wine : For a more complex touch, you can deglaze the casserole with a little red wine before adding the water.

Elengi beef cubes will bring an intense and authentic flavor to your broth. Their blend of subtle spices will enhance the taste of meat and vegetables.
